Sharing "The" Recipe, and Another List

Earlier this morning, I had an incredibly strong urge to bake; so I asked myself, "Why fight it?? When will you actually have an opportunity to bake again??" I answered these questions by, well, baking of course!! :0)

However, this latest baking adventure of mine is not the subject of today's blog post - I will save that treat for my next post (which will appear on my blog later, during the upcoming week). Please stay tuned for that!!

As for today's post (which has two parts to it), I am starting off by sharing "The" recipe that quite a number of you have expressed interest in: The Peanut-Butter-Banana Bread recipe from my previous post.

I did not post the recipe in my previous post, since it was adapted from my all-time favorite banana bread recipe from the Veganomicon cookbook (the recipe that I always use, when baking a banana bread - and you know just how frequently I bake those, haha). But after receiving so many requests for my peanut butter variation of the recipe, and considering the fact that I modified the original recipe quite a bit (and always give the original recipe the credit that it deserves!), I figured that it would be okay to post my version after all.

Also, considering how much I rave about this recipe (and the cookbook itself) on my blog, the authors should appreciate the highly-favorable press, right?? So, hopefully I will not get sued for this - and if I do, at least all of you will still have a scrumptious loaf of banana bread to enjoy ;0)

So without further ado, here is "The" recipe:

VeggieGirl’s Peanut-Butter-Banana Bread

(**Adapted from the Lower-Fat Banana Bread recipe in Veganomicon cookbook**)




• 4 overripe bananas (reserve the smallest banana of the four, for the topping)

• 1/4 cup applesauce

• 1/8 cup canola oil

• 1/2 cup sugar (I used organic turbinado sugar)

• 2 teaspoons molasses (I used the Plantation brand of blackstrap molasses)

• 2 cups flour (I used Bob's Red Mill GF All Purpose Baking Flour)

• 3/4 teaspoon baking soda

• 1/2 teaspoon ground cinnamon

• 1.5-2 cups natural peanut butter

• Nondairy "milk" of choice, added to the batter as needed (**Note: I used Living Harvest hempmilk, and ended up adding at least 1 cup of the stuff to the batter)



Preheat oven to 350°F (180°C). Lightly coat a 9"x5" loaf pan with nonstick cooking spray.

In a large bowl, thoroughly mash three of the bananas. Then, add in the applesauce, canola oil, turbinado sugar, and molasses. Mix well.

In the same bowl, add in the flour, baking soda, cinnamon, and peanut butter. As the mixture starts to thicken up/combine, add as much nondairy "milk" as you need (but not too much) so that the batter is mixable.

Pour mixture into the 9"x5" loaf pan (coated generously with nonstick cooking spray), add the remaining banana on top (in slices!!).

Bake for about 45-50 minutes, until a toothpick inserted in the center of the loaf comes out clean.

Makes roughly 10-12 slices/servings.





**And now, onto the second part of this post (if you have made it this far, haha):

I had so much fun filling out the Vegan 100 List, that when I stumbled upon a new (but similar) type of list (on Peabody's blog), I knew that I just had to fill this one out as well.

What is this 100 list for, you are wondering?? It is a Sweet 100 list!! And considering how much I love sweets (as evidenced by all of the baked goods I have made and eaten thus far, haha), I thought I would share with you which sweet treats I have delighted in, over the course of my lifetime.


First, here are the rules:

1.) Copy this list into your site, including the instructions!

2.) Bold all of the sweets you've eaten--or make them a different type color.

3.) Cross out any of them that you'd never ever eat.

4.) Consider anything that is not bold or crossed out your "To Do" List.

7. Black and white cookie - While in New York City, years ago. It's one of those quintessential cookie varieties, for sure!

8. Seven Layer Bar (also known as the Magic Bar or Hello Dolly bars)

9. Fried Fruit pie (sometimes called hand pies) - I have eaten an Apple Hand Pie, to be exact.

10. Kringle

11. Just-fried (still hot) doughnut

12. Scone with clotted cream

13. Betty, Grunt, Slump, Buckle or Pandowdy - An Apple Brown Betty!

14. Halvah - also known as the "Turkish Delight."

15. Macaroons - in many different flavors, including Banana Split.

16. Banana pudding with nilla wafers - I really need to try this vegan version of it.

17. Bubble tea (with tapioca “pearls”)

18. Dixie Cup - major nostalgia with these little ice cream cups, since I used to share them with my grandmother (may she rest in peace).

19. Rice Krispie treats - seriously, who hasn't eaten these??

20. Alfajores - I have eaten the jam-filled ones, covered in powdered sugar.

21. Blondies - here, here, here, and here.

22. Croquembouche

23. Girl Scout cookies - considering the fact that I was a Girl Scout for many years, obviously the answer is a resounding yes, haha.

24. Moon cake

25. Candy Apple - perfect for the Autumn season, no?

30. King Cake - yes!! Such a colorful, traditional cake for Mardi Gras. I remember one year, I almost swallowed the plastic baby figurine that is baked into the cake, while eating my slice, haha.

33. Tres Leches Cake - topped with cherries! :0)

Now remember, all of the sweets that are in bold font are the ones that I have eaten over the course of my lifetime - so obviously, they are not all vegan (since I have only been a vegan since March 2007). But I still had fun realizing/revealing just how much sugar I have consumed over the years, haha! :0)

i just baked some blondie cookies but i wish i waited so i could bake this bread instead - i cant wait to try baking it - maybe next weekend i can make some time to try it :) :)

also i must say great idea w/ topping the pizzelles w/ pb! my grandmom makes them from scratch all the time and i NEVER thought to do that!

Thanks for sharing your version of the recipe, VeggieGirl! I've never used turbinado sugar, molasses or hempmilk in a recipe before - no wonder my stuff doesn't look half as good as yours ;o) I will have to incorporate your ingredients more often, since you always steer me in the right direction!

Yay for that recipe! I will be trying that.. possibly this week. O that subject, I'm 98% certain that you have no fears of copyright infringement with your changes. Copyright laws are pretty specific and as long as you cited your inspiration, you're fine.

Separately, I didn't make it all the way through your sweet list, but I did make it far enough to feel obliged to tell you halvah and Turkish delight are different! Make sure you try both-- halvah is a sweet cake/paste made from tahini that melts in your mouth, whereas Turkish delight is more of a gelly candy, often with pistachios. Real, fresh Turkish delight is awesome... but packaged is kind of gross. Both are usually vegan AND gluten free! Except sometimes Turkish delight is rolled in flour, so I guess only the halvah is.

Enough info for one comment? :)

Since I enjoy my bananas when they are browning and getting gooey (and cold! Must be cold!), I suppose I will have to hide them so they get ripe enough to be used in such a fabulous recipe! :)

Also, I just read your blurb on chocolate/carob, and I am the same way! I've always loved both, but for the longest time now, chocolate just makes me feel dull and gross! Plus, it aggravates my acid reflux!
Carob ROCKS. Hands down.

You've never tried Nanaimo Bars? They're a Canadian classic and if you like sugar, these are super sweet! My mom & my stepmom always make them at Christmas time. I've only ever had traditional (which contain eggs and dairy) but Sarah Kramer's new book, Vegan a Go-Go has a recipe for vegan Nanaimo bars in it!! It's on my must make list.

And your famous peanut butter banana-schmana bread (that actually is a very cool name for it, I think you should use that) has blackstrap molasses in it. That actually is very very good for you. Remember this recipe for when you do your first cookbook: "Veggie Girl's Healthy but Tasty Treats". Am I right or what? lol

I make a totally infamous peanut butter banana bread as well. I call it 'Elvis Loaf' because it also incorporates a hefty helping of bourbon, chocolate and butter. Yours is..heheh, well, significantly healthier among other things. In fact, I think my Elvis Loaf is suitably shamefaced and suffering from a lack of self esteem right now.

Goodness that PB banana bread sounds delicious! Love that you use gluten-free flour too... it's a bit sad now that I have to stay away from anything containing wheat :(

I'm guessing the pralines were a treat at the River Walk in Savannah....I LOVE it there!! It's only a few hours from my house! Gorgeous!

We need to veganize pralines! Too bad they have pecans! :(

I finally figured out what I am going to use instead of bananas for this bread! PUMPKIN!! I am suspose to bring in fall theme treats next week for work and I was going to use your recipe, but instead of banana I was going to use pumpkin! I can't wait to try it! I just thought I would give you the heads up :)

LOVE the list! However re: #14 (and I know you didn't write it)but the nerdy-foodie-history nut in me compels me to correct it for the masses who might be reading and uninformed.

"Turkish Delight" and Halvah are two totally different things.

Halvah is made from ground sesame seeds and nuts, Turkish Delight is jelly-like and fruity, sorta like the "Aplets and Cotlets" candy.

Wow I just saw Janetha link this...nice work Miss VG! I think I need to make this. Sadly, I "found things" to use 3 overripe nannas with this morning. This would have been wayyyy better. Not that the random things I made weren't fine, but ya know. And I always have Bob's GF flour on hand so I woulda been golden. NExt time :)
