Leaving You With a New Product Preview, Recipes, and a Surprise

I am officially in "summer mode" right now (despite the severe lack of sunshine where I live - I need my Vitamin D fix already!!)...


No more classes, exams, assignments... and it feels FANTASTIC :-)


I want to kick off my summer vacation with all of you; so what better way to do that then with Episode 15 of VeggieGirl TV and with more featured recipes??

- Remember when I mentioned that my "official" 21st birthday celebration would be taking place in May?? Well, the time has come!!

And now I present to you my latest baked good creations and a recipe:




Chocolate Avocado Cupcakes


I used this recipe from the September 2008 issue of Vegetarian Times magazine, making my usual substitutions (using gluten-free flour, hempmilk, etcetera; didn't make the glaze).

These cupcakes have a mousse-like texture, rich flavor, and heavenly aroma. My parents, grandfather, siblings, nieces, nephews, Shannon, and myself (a "no chocolate" girl) absolutely loved these treats!!




Chocolate Chip Banana Bread


I received many requests from my family members to bake a loaf of banana bread; and hey, I always aim to please my best "customers," so of course I complied. Although a Chocolate Chip Banana Bread seems rather simple, it is often the simplest treats that satisfy the most.

I used this recipe for the banana bread, substituting 1.5 cups of chocolate chips into the batter in place of the peanut butter.

Caramel Banana Bread


I baked this banana bread variety for Heather and Mark, of the "Hangry Pants" blog. The aroma alone is enough to make anyone swoon, whether or not you are a caramel fanatic (like me) or not.

VeggieGirl’s Caramel Banana Bread

(**Adapted from the Lower-Fat Banana Bread recipe in Veganomicon cookbook**)




• 3 overripe bananas

• 1/4 cup applesauce

• 1/8 cup canola oil

• 1/2 cup sugar (I used organic turbinado sugar)

• 2 teaspoons molasses (I used the Plantation brand of blackstrap molasses)

• 2 cups flour (I used Bob's Red Mill GF All Purpose Baking Flour - but any flour will do, depending on your needs)

• 3/4 teaspoon baking soda

• 1/2 teaspoon ground cinnamon

• 1.5-2 cups caramel syrup (I used the Santa Cruz Organic brand of caramel syrup)

• Nondairy "milk" of choice, added to the batter as needed (**Note: I used Living Harvest hempmilk)



Preheat oven to 350°F (180°C). Lightly coat a 9"x5" loaf pan with nonstick cooking spray.

In a large bowl, thoroughly mash three of the bananas. Then, add in the applesauce, canola oil, turbinado sugar, and molasses. Mix well.

In the same bowl, add in the flour, baking soda, cinnamon, and caramel sauce. As the mixture starts to thicken up/combine, add as much nondairy "milk" as you need (but not too much) so that the batter is mixable.

Pour mixture into the 9"x5" loaf pan (coated generously with nonstick cooking spray).

Bake for about 48-50 minutes, until a toothpick inserted in the center of the loaf comes out clean.

Makes roughly 10-12 slices/servings.

Have fun at VEGAS! I was there on March, on earth day to be specific. But i wasn't able to "enjoy" it since i'm only 19. And it was earth day the day I went so all the lights were turned off at night. my family and i were waiting for the water show for two hrs and were so disappointed when they didn't show it due to earth hour. oh well better to save water! lol.

hopefully i'll return to enjoy it more!

Happy belated 21! Have an awesome time in Vegas... I've never been but I've always wanted to play those fun looking slot machines :P

The caramel banana bread looks fantastic! I'll have to see if I can find some caramel syrup. Then I will have to try and make it last long enough for it to go in a baked good!

Your kitchen is looking great by the way. it's fun to see all the new little additions every week. It looks much more "lived in" than some of your earlier videos! Haha and I'm amazed the balloons are still up!

I really need to try Sunshine Burgers, I haven't tried any of them but a Falafel burger?! Swoon! I'm actually planning on making falafel tomorrow. Yum.

I saw that recipe and it looked so good! Maybe now that I'm not so weird about fats and avocados I can make them. I actually just bought avocados too! It's a sign I need to make them haha

Wow! I MUST try those cupcakes and the caramel banana bread! They are both definite MUSTS!
I had Sunshine burgers for the first time at a theater in Appleton, WI. The theater caterer new about my dietary needs, etc... He went out and bought me Sunshine Burgers, cooked them separately (on foil), and kept them away from all the other food! It was amazing. Seriously, I almost cried! It's the little things, right?

FALAFEL BURGER! I'm in heaven! I saw the breakfast patties at my little health food store this morning but decided against them for some strange reason - probably because my freezer is bursting with coconut milk ice cream instead. Can't wait to see your review. I'm thinking that I will make the peanut butter caramel from Veganomicon to use in Caramel Banana Bread since that looks unbelievable.

The new Sunshine burgers sound good - I actually have never tried that brand before. I'll have to give 'em a go sometime. Falafel burger sounds great, too!

VG: You almost killed me with this. I tried to put the whole thing in my mouth when I first saw it. Luckily, I showed restraint and only ate half of it in one sitting and saved the rest for the next day.

If you're going to be in Vegas, you really should take the short flight to LA to visit all of your LA vegan friends! Plus, WorldFest is Saturday and it would be so fun if you were here for it! I'm obviously (mostly) kidding since you have your birthday plan in place. Just sayin'. ;)

For your GF goodies, is there a reason you don't add xantham gum to quick breads? Just curious because I thought that was a necessity in GF baking, but find the proportion instructions on the back of the Bob's Red Mill bag to be a little confusing. In any case, your baked goods look great!

Oh my goodness! So your caramel banana recipe sounds incredible! I'm actually going to use the Colombian version of dulce de leche instead of caramel. I bought more than a pound of bananas yesterday because the whole bunch was on sale for only 79 cents! 79 CENTS!

Oh, and thank you for introducing me to hemp milk! I get the unsweetened vanilla kind and love it!

Your recipes are gorgeous! I definitely want to experiment more in the kitchen this summer.

But I have a baker question. My dad is a type 1 diabetic and can't have refined sugar. Fruits are ok, but no maple syrup, etc. In "the old days" I just used Splenda, but that stuff grosses me out now. Do you have any suggestions for sweetening baked goods without sugar? I would LOVE to make him those chocolate avocado cupcakes.

is hemp milk better than soy milk (or than other non-dairy milks)?
i see that you're soy-free and use hemp milk instead. oh, and i heard that soy milk blocks some enzymes that can cause protein deficiencies.

So I'm reporting back on the turn out of the banana bread recipe. It is sooooooooo good! I used avocado and almond oil instead of canola oil though. I think next time I'm just going to use almond oil though.

Felafel burger sounds HEAVENLY! I've not tried any sunshine burgers yet because of the lower protein count compared to others but wll check out the breakfast patty (am with you on savoury breakfasts though and will call it a lunch patty :P )

The caramel banana bread looks and sounds amazing! I saw it on Heather and Mark's blog but haven't been able to find caramel syrup here. Might work with maple?

hey there, i just found the falafel burger and bought them, being that i love middle eastern food . and omg, this smells and taste quite a bit like falafel, not bad for being vegan and gluten free. let me know how breakfast patty is.

I wish you would have recipes button because I would love to try your recipes but it is hard to find them also I am interested in trying the avocado cupcakes. Do you think you may put it online and can I use browning avocados? I love them and hate to waste them and sometimes they go bad too quickly before I can consume them. Thanks!
